Red Onion Marmalade - Take One

I'm currently cooking for the first time Red Onion Marmalade, using a couple of online recipes and amalgamating them: read on to find out how it goes..!


I have always loved goats cheese & caramelized onion tarts and will forever order it or anything similar in restaurants. It has been a few months since I started this blog and so far without any posts... so what a perfect start: a recipe I have always wanted to make, and to follow the ethos of this blog: a recipe I've concocted due to my somewhat limited ingredients this evening and being too lazy to go shopping...


Ingredients
400g Red Onions - 3 ½ medium sized
25g Butter - 
1 tbsp Soft Light Brown Sugar
150 ml Red Wine - Cotes du Rhone Villages 2008
3 tbsp Balsamic Vinegar - Sainsbury's aceto balsamico di Moderna
1 tsp Mixed Herbs
Freshly ground Salt and Black Pepper (To Taste)



Method
1. Peel onions and slice thinly.
2. Melt butter in a large saucepan.
3. Add onions to saucepan & simmer for 10 minutes until softened.
4. Add sugar, simmer for a few minutes.
5. Add remaining ingredients: Red Wine, Balsamic Vinegar, Herbs, Salt & Pepper.
6. Stir thoroughly, bring to a simmer and reduce to a low heat for approximately 45 minutes, stirring frequently.
7. Once Marmalade has been reduced, fill sterilised jars.


My batch made approximately 360g (split between two small jars)

From my taste test (last few scraps from saucepan) it's pretty yum!
I'll update on the next few days' meals made with various combinations of marmalade and, well, who knows, anything...

First Post

This blog for me, is a way of focussing and giving the odd crafty things I think of and do somewhat of a purpose and place to be compiled.
Whether anyone will read or even come across it only time will tell.
